Healthy Veggie and Egg Breakfast Muffins: 21 Day Fix Approved!




I love these little muffins for so many reasons.
*They are perfectly portioned to help me stay on track.
*They are easy and convenient to grab and go when I'm short on time!
*They are chock-full of veggies and protein.
*They freeze well for later!
*My kids love them, too (who doesn't like a muffin?)!

This recipe makes 12 egg cups and you can eat 2 muffins per serving, so this is enough for 6 servings. I personally doubled this recipe in order to make a full tray of a dozen muffins. Here's what you'll need:

Ingredients:

* One dozen large eggs
* 12 ounces Baby Spinach, finely chopped
* 1 red bell pepper, chopped
* 1 green bell pepper, finely chopped
* 1/2 a red onion, finely diced
* Sea Salt and fresh cracked pepper (to taste)



Here's what you do:



1. Preheat your oven to 375° F.



2. Lightly coat your muffin tin with a nonstick coating (I use coconut oil, but a nonstick olive oil spray will work too). I do not feel cupcake liners work well for this recipe.



3. Place eggs in a large bowl and whisk/beat until scrambled well. Although I often substitute egg whites in recipes, I feel the healthy fat from the yolk of the egg is necessary here, not only for them to rise well but also to release from the pan.



4. Add in your chopped veggies and seasonings and whisk away again.



5. Use a 1/3 cup measuring cup and start distributing between the muffin tin, one scoop at a time per muffin. This way, you will have everything evenly split between cups, as the veggies have a tendency to sink to the bottom. Continue until all are evenly filled.


6. Bake for approx. 15-20 minutes at 375° or until toothpick inserted into the center of cups comes out clean.



7. Here is where a I think people fail on this one. The first thing to do is be patient, and let them cool about 5 minutes. As soon as they are set, I use a plastic fork or knife (not metal, you'll ruin your nonstick pan!) to peel them away from the edges in a circular stroke. After that, the fork can pop them up from the bottom pretty easily!



You can store these in the refrigerator and heat them up in a microwave when you are ready to eat, or freeze them and reheat them (but trust me, with my kids eating them too, they don't last that long!). You can easily have 4 of these muffins (and count it as 2 reds and 2 greens) to start your day right!

Remember, you can eat 2 muffins per serving! Each serving is 1 green and 1 red container on the BeachBody portion controlled container system, most popularly known as the 21 Day Fix nutrition plan. I am currently following this same plan with the all new workout, The Masters: Hammer and Chisel, and it has been a HUGE component of maintaining my 95 pound weight loss.

The Power of Positive Affirmations







Sometimes the negative comes at you before you even get a chance to pick your mindset for the day. That's right, it's a choice! Today in my challenge group I asked them to write positive affirmations for themselves this morning. What would yours say?

What you SAY about your food will subconsciously become truth for your body. The same is true for what you say about your body. Your subconscious mind will believe the thoughts you say or think, thus making it a reality. Have you ever heard the expression "You create your own reality?" Have you ever stopped to think about what that means? It means that what we think, we become. So things like:

"I should be SO much further along".
"I am so fat"
"I look fat"
"I feel fat"
"I look gross in these jeans"
"Look at my disgusting muffin top!"
"I have thunder thighs"
"I'm behind everyone else."
"I should be able to do xxxx by now."
"Why is my body taking so long to change or catch up??"
"I shouldn't be eating this, it will make me fat."

The reality is that your thinking needs to change along with your body - in its own time on its own schedule - in order to be and more importantly STAY successful at reaching your health goals. Perhaps there are other things to learn about ourselves along this journey than just getting the results?!




Real, long-lasting change needs to occur within in order to REALLY change your health.

Look around and see what is unfolding around you. Its actually pretty awesome. It isn’t always how you LOOK in the beginning...focus on how you FEEL.

Why & How You Should Try New Foods!







So, when I first started coaching I ordered a bag of Greenberry Shakeology under Darrell. I wanted to have and try them all so I could speak honestly about each one. Guess what? I HATED IT. I believe my exact words to Darrell were "I'd rather lick an ashtray than drink this." Nice, huh?

Well, it's been almost 2 years since I tried it. I have had a few customers ask for samples, and I no longer had any. So I ordered a bag and broke it out this morning, fully expecting to think it was disgusting. Guess what? It was delicious. Darrell took one to work with him. On his way out the door, he stopped and asked me what The recipe was, because he likes it so much he wants to make it again.






➡️➡️➡️FYI I used one scoop Greenberry Shakeology, one cup of unsweetened cashew milk and 1/2 a cup of frozen peaches, totaling 1 ❤️ and 1/2 💜.⬅️⬅️⬅️

The point of this is NOT to get you to go order Greenberry Shakeoligy. The point is to get you to expand your thinking. Realize that as you start changing your eating habits, your tastebuds change. As you eliminate more and more processed foods and preservatives and artificial sweeteners, your body responds by regenerating taste buds that are open to nuances and flavor combinations that you may not have enjoyed before.

I challenge you to try something today that you thought you didn't like before. Maybe you haven't had it since you were a kid, but your mind tells you you still don't like it. Maybe you've only tried it raw, but should try roasting it (beets, anyone?). Maybe you had it canned, but not fresh. Either way, challenge yourself and share below what you will try- something old or something new!

Quinoa Berry Parfait: Healthy, Delicious High Protein Breakfast




If you've been looking for an easy, delicious, protein packed breakfast or snack solution that will also add some sweetness to your day, look no further: these Berry and Quinoa parfaits are amazing!


Just looking at them makes me hungry for one- and they are a totally easy, guilt free option that has flavor as well as convenience. Throwing these together took me all of 5 minutes-- and for a busy mom like me, who wants to maintain the 95 pounds I worked hard to lose, they are going to be a new staple in my fridge!

I love that they easily translate to containers for my 21 Day Fix Mealplan, which works with my clean eating lifestyle. ***You can learn more about that, and how to make me your free coach, here!*** My current workout program, the Hammer and Chisel, follows the same easy portion system, so that eating right has become so much simpler.


Here's what you need:

*2 Cups Cooked Quinoa
*3 Cups plain, Nonfat Greek Yogurt
*4 Cups Fresh or Frozen Berries
*1 T Local Raw Honey
*4 Mason Jars

That's it!


Layer the ingredients in the jars evenly. I drizzled honey on top of each yogurt layer. I used frozen berries for a couple of reasons. First- convenience! They keep in the freezer, and I can just grab my purple container and measure them out quickly! The second is COST! You can always find a frozen selection of fruit much more cost effective than fresh, especially when fresh is out of season. Organic is more affordable this way, if you choose to, and flash frozen fruits also maintain their nutrients! Win-win-win!


Each one of these beautiful treats is modifiable to the 21 Day Fix Container System, with each one of the 4 servings counting as 1 Red, 1 Purple, and 1 Yellow. Healthy, balanced, delicious.

Is Your Past Haunting You? Tips to Move On and CRUSH Your Goals!




This quote really speaks to me this morning. A lot of people feel like they've already FAILED at 2016, but it's only one week into the year! I'm not talking about just weight loss here, but ANY goals and aspirations you have.

So many people drag the failures of yesterday into today, but all that does is rob them of the potential to make today amazing. Is there anything that you should let go of but haven't? I challenge you to BLESS AND RELEASE!
So what does that mean exactly? How do we just let things go? Well, it's not simple, but it is valuable. Is something dragging you down? Weighing you down? Is there something you've tried to do before that you consider yourself a failure at? Most of us will have at least one thing that pops into our mind. Here's a few steps to help you decide how to handle it:

1. Decide if it's still a goal you have. Is it something important to your life now? Think about how it would feel if you had the opposite outcome. Would you feel better? Or maybe indifferent? If it would make you happier, or feel better, proceed to step 2!

2. Try again! Maybe the time wasn't right before. Maybe you didn't have the right tools. Maybe you need to enlist better support. But if this is a goal that will improve your life, you need to let the past go and try again. There may be new variables that will help you succeed this time.

3. Don't just wish for it, work for it! What can you do to improve your chances of succeeding? What tools can you give yourself that you didn't have before? Can you add accountability somehow?

4. If perhaps you decided you would be indifferent to the result, this is when you need to bless and release. So what does that mean exactly? That means not bringing it up at every turn. That means truly forgiving yourself (or the other person) for not making that happen. That means putting it out into the universe and making peace with it. And then MOVING ON.
